Still Cookin'

Even though I haven't been blogging much, we've still been cooking! Here are a few recipes we've tried and enjoyed lately.

Maple Dijon Chicken
We have had this three or four times since I found the recipe on Pinterest! And we will continue to have it until we use up the expensive maple syrup I bought for it. ;)  But that's okay, because we really like it. I've used chicken breasts and chicken tenders, and we prefer the tenders by far.

Instead of the rosemary, I use a liberal amount of Italian seasoning and garlic powder. The "sauce" in the bottom of the dish is pretty thin, but it's great on top of rice or potatoes or green beans...all of which we have had on the side. Try this for sure! It is super easy.


Barefoot Contessa Pea Soup
The original recipe calls this "Spanish" pea soup, but I'm not sure why. It's about as basic as it gets, but it was a fresh and tasty soup option! (Obviously you have to be a fan of peas, though.) Instead of crispy ham, we had grilled ham and cheese sandwiches on the side. As an aside, it totally reminded us of this moment on Iron Chef. lol

Cheddar Jalapeno Chicken Burgers
We loved these! They were really easy to make and tasted great. Although what doesn't taste great with guacamole on top? (To quote famous foodie Guy Fieri, "I'd eat that off a flip flop.") Our grocery store only carries ground chicken in 1 lb. packages, so we modified the amounts of the other ingredients.

They could probably take more shredded cheddar (or a slice melted on top), but the flavors were really good. The jalapeno was not super spicy, which was a plus for me. We went simple with toppings and only added sour cream in addition to the guac.

 Chicken Enchilada Zucchini Boats
We decided to give this one a try, but come on...zucchini instead of yummy tortillas? However, we were pleasantly surprised! This was really good, even though I did not make my own enchilada sauce. (I like to use Ortega Taco Sauce that comes in the glass bottle.)

I saved another step by not blanching the zucchini boats at the beginning, and it didn't make any difference. In fact, if I had done that, I think they would have turned out too mushy. These were also great as leftovers! You will definitely need to eat more than the listed "one boat" as a serving.

Tomato Pesto Frittata
This is a super easy veggie frittata. I used store-bought pesto, but it would probably be even better if you make your own. Only one sliced tomato would fit around the top of ours, but it was plenty. We had it for dinner, but I think it would be great at brunch. Yum!

New Ride

I haven't posted much lately, because we've just been doing a bunch of boring adulthood stuff that isn't the greatest blog material. :) At the beginning of January, we made a "To Do in 2013" list that was full of boring adulthood stuff. So, we've been working our way through that and otherwise hibernating a little until it gets (and stays) warm.

But...one exciting thing we have checked off the list is a new (to me) ride! I had been on the hunt for months, which included a few false alarms and disappointments, and I had a picky long and very specific list of requirements. So a few weekends ago, I found this car (a "match") online on Sunday morning, we headed up to Roswell as soon as the dealership opened, and a couple of hours later...it was mine! Or ours, if you want to get technical. ;)


When we were driving it away from the dealership, I said, "I can't believe I got the exact car I wanted!" Andrew did not miss a beat before saying, "I can! You wouldn't settle for anything else!" He knows me well.

I would be remiss, though, if I didn't give a shoutout to my old car. She had been with me since 2002! When I (okay, the guy at the dealership, Andrew, and I) cleaned her out (yes it took three people), it was like I was opening a time capsule. There were relics from high school, college, grad school, and adulthood. Some more embarrassing than others... Here we are together before she was driven away to become someone else's. Even though she had started costing us more in repairs than she was actually worth, this was still a sad moment.
