In Bloom


Atlanta had perfect spring weather today, so we made a trip over to the Atlanta Botanical Gardens. There was much more to see than we had expected (including some really amazing exotic plants and flowers), and we took a few hundred pictures of some of our favorites!

Menu Monday

Baked Creamy Chicken Taquitos
{Recipe Here}

These were hard to get a great picture of, but oh well. All of the goodness is inside anyway! We loved these, and that was even with a few missing ingredients. (I forgot to buy a lime and used chopped green chiles instead of green salsa. I also used parsley instead of cilantro*.) The tortillas got nice and crispy in the oven, and the filling was so tasty. You can sample it before you roll the taquitos and adjust it to your liking. These were definitely a Pinterest recipe win!

Steak Pizzaiola with Roasted Red Potatoes & Bread
White Chicken Enchiladas with Black Bean, Avocado & Tomato Salad
Dinner out to celebrate all Andrew's hard work lately!

*Has anyone else noticed the kudzu bug invasion going on right now? They sort of smell like cilantro when they emit their "I'm threatened" smell, so it's not the most appetizing thing to me right now!

The President, the Working Man & the Single Girl

This weekend has been a little out of the ordinary on a couple of counts. Here it is in phone pictures.

Andrew was able to leave work earlier than usual on Friday, but he didn't make it home until later than usual. That was because we had a VIP visitor in our neighborhood...President Obama! He made a stop a few miles away from us right after arriving in town. I stood out on the sidewalk in hopes that he would come down our street. No such luck. But I did get to see the motorcade as it left for its next destination (from the roof, my next stakeout).


From afar anyway. ;) My phone camera is "just okay" to begin with and zoomed in, well...you can barely "get the picture." But the tiny blue spot in the middle is the combined flashing lights of the motorcade traveling down 85-south. I was still excited!


These people were probably not as excited.

Then, unfortunately, Saturday had to be a work day for Andrew. He has a trial coming up this week, so there was plenty to do. Weekend work is pretty rare for him, though, so he toughed it out while I spent the day doing things that he usually loves tolerates coming along with me to do. Old Navy, Bed Bath & Beyond, Target, and his ultimate favorite...the craft and fabric stores! It felt like summertime in the pre-real world days...


...for more reasons than one. Whew!

He came home early enough that we had time to pick up dinner and eat it poolside! The temperature was back down to reasonable/comfortably warm. (It wasn't necessarily peaceful thanks to some St. Patrick's Day revelers, but when you share a pool with hundreds of other people, it happens.)


Today we had a nice morning at home before he had to head to work again. On my schedule is grocery shopping, cleaning and full on crafting chaos. :)

Menu Monday

Apple, Cheddar & Bacon Stuffed Sweet Potatoes
Now. I am not a sweet potato fan. But I can do them this way! This was a surprisingly good combination of flavors. We used Braeburn apples (that stayed a little crunchy) and extra sharp white cheddar.

Creamy Chicken Taquitos with Black Beans & Guac
Honey Onion Chicken with Broccoli & Rice Pilaf
Breakfast for Dinner

 While we were in Statesboro, we also got a refill for our honey bear. (Hence the honey onion chicken selection for this week.) Yum!

Back from the Boro

We decided to make a little trip down to the Boro this weekend. Nothing planned -- just for a little visit! We had a nice, relaxing time as usual, with people and animals to see and plenty of food to eat.







Now we're unpacking, organizing and getting ready for another work week (boo). But we had a good weekend and hope you did too!

Last night there was a bug buzzing around behind the blinds in one of our living room windows. It was so big that it was causing the blinds to sway, so I just knew it was going to be of the nasty and/or stinging variety. But instead...

Menu Monday in the Evenin'

Chicken Enchilada Pasta
This was a great Pinterest find! I left the cheese out of the sauce, and it was fine with just the (heapin' helpin' of) sour cream. It was even better for lunch leftovers, which lasted for quite a few days... If you happen to make your own enchilada sauce, I think it might be stellar!

I also took the recipe as an opportunity to try out this Pinterest trick:

KitchenAid shreds chicken! Amazing!


We went to Bonney & Paul's for dinner last night, and Bonney made a yummy chicken cacciatore while I contributed a strawberry-basil salad. It's technically a "summer salad," but we thought it was a delicious combo even in the spring-ish! I used mixed greens instead of romaine and changed up the balsamic vinaigrette. (More like a 2 or 3:1 oil to vinegar ratio, plus sugar to taste.) Dinner was a fun way to end the weekend/start the week!

Teriyaki Chicken with Fried Rice and Sauteed Zucchini & Onions*
California BLTs and Roasted Red Potatoes

*We are pretty much having this meal just to use our supply of this. Don't judge. ;)
