I realllly didn't feel like menu planning this week, but as always...it must be done! We're relying on some old favorites and our freezer stock, which makes it a little easier. :)

Weekend in Short

We haven't written much about our weekends lately, because they've mostly been filled with unblogworthy errands. A large part of this weekend was dedicated to the same, but we did manage to have a good time in between!


I crafted (more on that later)...


We had a fun lunch (Original Sin Hard Cider - yum!)...


...visited the Margaret Mitchell House...


...and ended on a delicious note with Baked S'mores!

Make Me Over

I've been obsessively scouring the far corners of the Web looking for an affordable pre-made template for a new look here on the blog. I think Andrew has heard, "How do you like this one?" enough to last him for awhile.

In the process, I was continually amazed at the amount of money people seem to be willing to spend on the look of their blogs... But it never occurred to me to check the, you know, free ones that are provided by Blogger. I assumed they were all hideous.

Who knew!

Buffalo Chicken Stuffed Potatoes

Buffalo chicken dishes seem to be all the rage right now. Maybe because they are delicious. :) We had these this week and thought they were yummy! Add some carrot and celery sticks, and you've got a complete meal.

Buffalo Chicken Stuffed Potatoes
{Adapted from Food Network Magazine}
  • 4 russet potatoes, scrubbed and dried
  • 1 T butter
  • 1/4 cup sour cream
  • 1/4 cup celery leaves, chopped
  • 1/4 tsp garlic powder
  • Salt & pepper, to taste
  • 1/2 lb. chicken tenders, cooked and cubed
  • 1/4 cup buffalo sauce
  • 1/2 cup cheese, shredded (cheddar, monterey jack or bleu)
  • Sour cream or ranch/bleu cheese dressing (optional)
Directions:
1. Preheat the oven to 400 degrees.

2. Wrap the potatoes in foil and bake directly on the oven rack for one hour or until tender. (Wait until they are done and then let them cool a little before you start the next step.)

3. In a medium bowl, combine butter, sour cream, celery leaves, garlic powder, salt and pepper.

4. In a separate small bowl, toss chicken with buffalo sauce until well-coated.

5. When potatoes are cool enough to handle (or use an OveGlove!), cut a thin slice off the top and discard. Scoop the flesh out with a small spoon, leaving enough on the sides to hold the skin up, and place in the bowl with the sour cream mixture.

6. Mash potatoes and sour cream mixture until well-blended. Add more sour cream if necessary to make it smooth.

7. Add buffalo chicken and any remaining sauce into the potato mixture. Stir well to combine. Taste and re-season if necessary.

8. Spoon filling into potato skins and top each with cheese.

9. Place potatoes on a rimmed baking sheet and place back in the hot oven until heated through. Broil to brown the cheese.

Top with sour cream or dressing and serve with carrots and celery!

Menu Monday

Honey Onion Chicken
This was very easy and tasted great! I was hesitant to make it because french-fried onions aren't necessarily the healthiest ingredient... But we decided to live a little. ;)

I'm excited about our choices this go-round! We had Southwestern stuffed peppers from the new issue of Real Simple last night, and they were a tasty start to the week.

Menu Monday

Chicken Cordon Bleu Pasta

I made a couple of changes to this one since the original blog poster said it was "missing something." I seasoned and sauteed the chicken then added a clove of chopped garlic and about 1/4c chopped parsley to the pan right at the end. Didn't have (so didn't use) dried onion.

I also heavily seasoned the sauce and added a heaping tablespoon of Dijon to it. Yum! (P.S. I used reduced fat cream cheese, and two tablespoons of butter is about all you need for the top.)

We really enjoyed all the new things we tried last week, so maybe I will post some of those recipes soon. This week brings an old favorite, a Pinterest find, and a couple of things I've had on the list to try for awhile. :)

Fortunes & Fruit

We've had a mostly errand-filled weekend, with a little fun and a little relaxation thrown in! Last night we went to a couples wedding shower for our friends Emily and Josh.

The (beautiful) invitation came with a very cryptic message...


...and two tarot cards! The entertainment for the evening was a fortune teller that we could all have a reading with! I had been to a psychic before, but Andrew hadn't.

She got a few hits (and a few misses), and according to her predictions...life could get very interesting in 5 weeks, 6 months or 2.5 years. Ha! We had fun and thought it was a really cute and creative idea. And it was great for conversation!

Today we had brunch at The Flying Biscuit before going to browse at the Fresh Market. We had a few items on our list but enjoyed seeing some of the oddities in the produce section. At one table, I said, "Look at that ugly thing!"


And wouldn't you know. Of course we had to buy one! I guess it'll be our dessert tonight. :)

I think we are fully "recovered" from the holidays and all the (great but plentiful) food they bring! We're back to normal grocery shopping and menu planning, and here's what we're having this week. Trying a couple of new things for the new year, too.

First Friday

I saw several people on Twitter refer to today as "the first Friday of 2012." I hadn't really thought about it, but so it is!

We enjoyed a pretty low-key New Years Eve. A few years ago, I was sick on NYE, so we stayed in. And we kinda liked it. This year we went to dinner at one of our favorite restaurants (South City Kitchen) and then came on home for some bubbly.
