White Chicken Enchiladas
This recipe was going around Pinterest as "the BEST" ever. I don't know if it's the greatest of all time, but it was really good! Andrew said to "put it on the good list." The only changes I made were to heavily season the chicken before cooking it (s&p, garlic, cumin, chili) and add some sauteed onions/garlic to the filling. I didn't quite use all the sauce, although later I wished I had. Yum!

This week we'll be having:
- Mongolian Beef with Rice & Broccoli (Chick-fil-A called one night last week, so this is a hold-over. ;) We actually had this last night, and it was really good!)

- Chicken with Potatoes, Bacon & Cabbage
- Garlic-Sherry Burgers with Stilton & Pub Browns
- Tentative dinner out...and if not, breakfast for dinner!
