Southwestern Stuffed Peppers
These are from quite a few "Menu Mondays" back, but I saw them pinned on Pinterest yesterday and remembered how tasty they were! I think we added additional seasonings (taste and adjust before you stuff/bake) and cheese (never hurts). And just a note... Although leaving the stems on is pretty, they will burn and smoke profusely when reheating in a microwave, threatening to set off the fire alarm in your work break room. ;)

Today is our one year blogiversary! We started the blog on our 6 month wedding "anniversary," which means today is also our year and a half wedding anniversary! More on how we celebrated that later. :)
