Beef & Corn Tacos
This was an easy dish, but we sort of took the idea from the recipe and then switched it up a little. I used flank steak instead of the ground beef and used a dry rub of whatever taco-ish seasonings sounded good at the moment. Definitely more than just chili powder! I sliced the steak really thin, cooked it in a skillet in batches, then sauteed the corn in all the brown bits. Yum! We topped ours with lettuce, sliced radishes, tomatoes, sour cream, and avocado.

P.S. The salad we had last week with grilled chicken, fresh peaches, caramelized shallots, and strawberries was also great! Just not very photogenic for some reason. :) We used Braswell's Vidalia Onion Peppercorn Dressing...delicious!
