Menu Monday

Buffalo Chicken Pizza
This was another winning alterna-pizza! The Laughing Cow reduced fat blue cheese wedges were just okay, and I suspect they were included in the recipe because a.) they're spreadable and b.) this was a Weight Watchers version. But if you're already having buffalo chicken pizza....well, I say just go ahead and have some regular blue cheese! Otherwise, what's not to love? I made an herbed sour cream dip (just sour cream, chives, parsley, dill and a little garlic powder) that was great for the carrots and celery sticks on the side and also for crust-dunking.

Happy Monday! We got a new issue of Food Network Magazine last week, and it was full of winners. All of our dinners this week come from the "Weeknight Cooking" section. Easy enough! (The magazine can be somewhat hit and miss though; last month I was only able to pull a couple recipes that sounded good.)
This Week's Menu:

*I don't know about you, but every time I make lasagna, I assume we need more noodles. We never do. Which means we end up with lots of extra lasagna noodles. I'll be happy to use some of them up in a less labor-intensive way!
