(Sorta) Back to Menu Monday

Happy Monday! It sure was for us since we spent most of the day in Warm Springs on the tail-end of a weekend getaway -- a.k.a. not at work! More on that later, of course. :) We managed to menu plan in the car on the way back and even stopped by the grocery store before coming home. Multi-tasking! (I only say "sorta" Menu Monday because we're just planning three dishes and have no pictures!)

Buffalo Chicken Chili with Salad

Spinach, Tomato & Mozzarella Frittata with Biscuits

Trusty Taco Lasagna* with Rice & Guac

*I saw a serving tip via Pinterest for dishes like this. It suggested cutting the tortillas into the serving-sized pieces before layering them in the dish. Gonna try it out!
